FAROE ISLAND SALMON IN FIG LEAVES (SALMONE AL CARTOCCIO IN FOGLIE DI FICO)


    If you like salmon, you are going to love making this easy recipe that practically bakes itself!
In my version, fig leaves are used to retain the juiciness of the fish, but if you bake it in a pan (see tips below) you can reach the same results, minus obviously the fragrant smell of fig leaves.
    I wait all year long to be able to make this recipe, and when the fig trees' branches become inundated with leaves, all of a sudden, fish becomes a weekly treat for the entire family.
This recipe works very well with any kind of fish, preferably with frozen pieces, so there is no need to add water to the oven glassware as it cooks. Feel free to experiment and let me know how yours comes out!
FAROE ISLAND SALMON IN FIG LEAVES  
(SALMONE AL CARTOCCIO IN FOGLIE DI FICO
(Serves 4 people)
Ingredients: 
  • 4 pieces of frozen salmon
  • 4 large fig leaves (Optional)
  • 4 tbs of creole or cajun powder
  • salt and pepper to taste
  • 1 lemon, cut in rounds (one or two rounds per slice are recommended)
  • EVO 
Let's wrap it up...
  • Pick the fig leaves and wash them under cold water
  • Rest them on a paper towel and dry them 
  • Preheat oven to 365F
  • Lay each salmon piece on each leaf
  • Sprinkle the cajun or creole powder, salt and pepper
  • Cover with two rounds of lemon
  • Wrap the leave around the fish, poking a hole for the stem to go through the leave to seal 
  • Pour some EVO in an oven-safe glassware
  • Place salmon packages in the glassware, and bake for 25 minutes, checking for doneness every so often. (If the fish is still not completely cooked, leave in the oven for 7 more minutes - Salmon should have an internal temperature of 145F
  • Serve with your favorite vegetables or with roasted potatoes (Recipe coming soon!)
Option without fig leaves: 

The salmon can alternatively be cooked in a non-stick or stainless steel pan:
  • Pour EVO in the pan, and brown some garlic. 
  • Add the frozen salmon pieces to the oil.
  • Sprinkle the spices as above, add salt and pepper to taste.
  • Cover, and let simmer for 15-20 minutes, checking for doneness every so often. 
  • Five minutes before taking it off the stove, add the lemon rounds and cover while still simmering, until ready to eat.
