FIRE POPPERS - SOUFFLÉ CON FORMAGGIO PEPPER-JACK (CON PEPERONI PICCANTI)
Sometimes my family throws me a challenge, and I must admit that though most of the time I manage to dodge the bullet and score some points, some other times I end up having to go back in the kitchen and revisit a particular recipe to see what went wrong. Luckily for me, the latest popovers recipe I designed was a success, and I could not wait to share it with all of you in this post!
FIRE POPPERS
SOUFFLÉ CON FORMAGGIO PEPPER-JACK 🌶️
(FORMAGGIO CON PEPERONI PICCANTI)
(Makes 5-6 poppers)
Ingredients:
- 4 large organic cage-free eggs
- 1/2 cup of GF all-purpose flour
- 1 cup pepper-jack cheese shredded + some more to sprinkle on top of poppers
- 1 cup milk (whole or at least 2% works best - though milk substitutes can be used as well)
- 1 tsp of the following spices: nutmeg, chili powder, oregano (fresh or dried)
- 1/2 tsp of salt
- Pepper to taste
- 2 tbs of EVO
- 2 tsp of baking powder
- 2 tbs of butter for coating 5 ramekins (or muffin tins)
Let's get popping...
- In a medium mixing bowl beat the eggs with a manual or electrical whisk for one minute
- Add the salt, pepper, spices, milk, and keep mixing for another minute
- Add the flour in two parts and the baking powder, and mix until smooth
- Add the EVO and the grated pepper-jack cheese
- Mix all together for another minute on medium
- Preheat the oven to 350F, and reduce heat to 325F just before placing the Fire Poppers in the oven
- Coat the ramekins with some butter
- Fill them to 3/4
- Sprinkle some grated pepper-jack cheese on each
- Put in the oven on a foil sheet to prevent any leakage
- Bake for 20-25 minutes, or until tops have popped and they are soft to the touch
- Serve warm for breakfast, lunch or dinner.... Really any time of the day is good for these Fire poppers!
