GF TAGLIATELLE FANTASIA ALLA BARBARA - The perfect Mediterranean companion to any pasta!

  I came up with this recipe in an effort to create a full-flavored sauce that would combine different ingredients that are typical of  my Mediterranean heritage. The result is a delicate but yet satisfying ensemble of what I call "taste emotions" that will definitely inspire you to make this sauce more than just once, as this is by far the ultimate companion for any type of pasta! 
GF TAGLIATELLE FANTASIA ALLA BARBARA  🍽
(Serves 4 people)
Ingredients: 
For the Pasta: 
  • 1 pound of your favorite GF tagliatelle, linguine, or any other pasta
  • Salt for the pasta water
For the Sauce:
  • 1 cup of GF Kalamata (Greek) or Gaeta (Italian) pitted olives (that you can chop or leave whole)
  • 3-4 tbs of EVO
  • 3 tbs of GF capers
  • 2 cloves of fresh garlic
  • 1 tsp of creole or cajun powder
  • salt and pepper to taste
  • 5-6 GF anchovies in oil
  • a sprinkle of fresh parsley or rosemary
  • ...Are you ready for a surprise? - 1 tsp of grated lemon rind!
Let's start creating...
  • In a medium-large pot boil enough water for the amount of pasta you are cooking
  • In the mean time, sprinkle the EVO in a medium sauce pan, and add the chopped garlic cloves
  • Brown the garlic on low heat for a couple of minutes, paying attention not to get it too brown
  • Add the olives and capers and sprinkle the dried spices (I have found that sometimes the capers are too salty and may need to be rinsed first)
  • Add the anchovies, salt, pepper, and lemon rinds, and stir gently
  • Cook on low uncovered for 2 minutes (the anchovies will melt away releasing all of their flavor into the sauce)
  • When the pasta is ready and drained, pour the sauce directly into the pot (it's always a good trick to use some of the pasta to "clean" the sauce that is usually left over in the pan)
  • Sprinkle some fresh EVO on each dish, and serve hot.
