OVEN-BAKED HASSELBACK POTATOES (PATATE AL FORNO ALLA HASSELBACK)


    These baked potatoes are a staple on our weekly menu, and if you have teens who are willing to be your prep-chefs, cutting them will make it really stress-free for you! ;) 
    All jokes aside, they are really easy to make, and will turn out to be everyone's favorite side-dish!
OVEN-BAKED HASSELBACK POTATOES 
(PATATE AL FORNO ALLA HASSELBACK)
(Serves 4 people) 🍽
Ingredients:
  • 8 small-medium russets or red potatoes (these types of potatoes bake really well)
  • 2 tbs of butter to subdivide in smaller pieces
  • 2 tsp of: cajun, ginger, fresh or dried oregano and rosemary, salt
  • Pepper to taste
  • High-heat yielding oil to coat bakeware and sprinkle on potatoes (I like to use sunflower oil for all of my oven baking)
Let's get baking...
  • Preheat the oven to 400F degrees
  • Wash the potatoes and leave skin on, 
  • Remove any deep black spot
  • Apply thin parallel cuts without cutting all the way through the bottom
  • Coat an ovenware or cast iron skillet with the oil or line with parchment paper
  • Place the potatoes an inch apart and sprinkle salt, pepper, spices, and herbs
  • Cut small pieces of butter and place them on each potato
  • Sprinkle some drops of the sunflower oil on them
  • Bake in the oven at 400F for 45 minutes, or until center gets soft and rings start separating
