BEANS, ENDIVES AND TUNA SALAD (INSALATA DI FAGIOLI BIANCHI, INDIVIA E TONNO) - A medley of Mediterranean flavors!


    This salad is everything you need to quench your appetite for an energy-filled and refreshing meal.  There is nothing like combining simple ingredients to reach such flavorful results. The process is quick, and I promise you that you may find yourself wanting this dish to become part of your weekly meals on a regular basis. It keeps well for a couple of days in the fridge, and it makes the perfect carry-anywhere lunch.

    For this recipe, I like to use white beans (either cannellini or ceci) but any white bean, like great Northern, corona (or "Spanish beans" as we call them in Italy) will be perfect. My tuna of preference is the one that comes in big long chunks, but any other type of tuna works well (just drain the oil and the water). 

    Let me show you how to assemble this easy recipe, which I also hope will inspire you to come up with your own personal version.


BEANS, ENDIVES AND TUNA SALAD  

INSALATA DI FAGIOLI BIANCHI, INDIVIA E TONNO

(Makes 4 hearty portions)

Ingredients:

  • 1 can of your favorite tuna (drained of oil or water)
  • 1 can of cannellini / great Northern / ceci or any white beans (rinsed)
  • EVOO 
  • 1 lime
  • salt and pepper to taste
  • a few leaves of parsley or cilantro
  • (Optional: some chopped celery and/or fresh tomatoes)
Let's get assembling...

  • Rinse and drain the beans, and place them into a large serving bowl
  • Drain the tuna, and add to the beans (if you are using big chunks of tuna, you may want to pull them apart first)
  • After washing the endives, slice them per picture above, and combine them with the beans and the tuna
  • Squeeze the juice of a lime on everything, add the salt, pepper, EVOO, and the fresh herbs
  • Mix well with a serving spoon, and serve immediately or refrigerate for later use
  • (Optional: adding freshly chopped tomatoes on the vine will enhance the flavor and the color of this dish)
